A faculty of nutritionists, behavioral interventionists, and experts who work with people of low income and low literacy developed and now offer nutrition training for public health practitioners with limited experience in nutrition science or interventions. Each year, this intensive, week-long course accepts about 25 state and local public health practitioners who serve people with limited or no access to health care services. Priority is given to practitioners who work with middle-aged women of minority racial or ethnic status whose low income and other factors put them at risk for chronic conditions, such as cardiovascular disease, associated with poor dietary practices. The researchers have evaluated the feasibility and acceptability of the course, modified it, and disseminated their findings among public health partners.
